Crockpot Paleo Zuppa Toscana

(Like at olive garden but better)

Ingredients:

1.5 qt chicken/vegetable broth

2 c. Water

1 yellow onion

6 strips bacon

1lb ground Italian sausage(I like spicy)

4 sweet potatoes (sliced)

3 cloves of garlic

4 cups kale (destemmed & chopped)

1 can coconut milk

1.5 tsp pepper

1 tsp salt

Red pepper flakes (opt)

To make: Cook the bacon and chop it into small pieces. Drain half the grease and brown the sausage adding in onions and garlic halfway through.

Put the bacon and sausage mixture in the crock pot and add your sliced sweet potatoes, liquids and seasoning. Stir. Cook on low for 6-8 hours.

After potatoes have cooked through, add in the kale and coconut milk. Stir. Serve. Devour.

Its as easy as that! I love my crock pot and use it every week. There's nothing better than coming home to a hot meal and such little cleanup!
